In a medium bowl, mix lime juice, olive oil and salt. Mix and set aside.
Add cilantro and green onion and mix together.
Add hot sauce (optional)
Allow the mixture to rest at least half hour before serving.
Use to top “tostones”, potatoes, meat or any dish where you want to add a bit of a cilantro kick. (separate recipe from my collection)

For my brunch with my daughter Andrea, I prepared a homemade cassava tortilla and topped it with ham, arugula, carrots, avocado and olive tapenade. I finished it with balsamic vinegar and olive oil. This is the Recipe I used
