Creamy Chicken Cauliflower Soup

Creamy Chicken Cauliflower Soup

Prep Time: 20 minutes  |  Cook Time: 20 to 25 minutes

 Serves: 6

 

Ingredients:

 

1 Tbsp. coconut oil

1 large onion, chopped

½ cup celery, chopped

2 carrots, chopped

2 cloves garlic, minced

1 lb. boneless chicken breast, cut into ½ in. cubes

3 cups bone broth

Sea salt of pink Himalayan sea salt to taste

Black pepper to taste (if tolerated)

2 cups cauliflower florets

2 medium sweet potatoes, diced

1 (13.5 oz.) can coconut cream (Native Forest Simple or homemade

1 Tbsp. lemon zest

1 tsp. chopped fresh herbs (dill or parsley)

 

Preparation:

  1. In a large pot on medium, heat the coconut oil. Add the onion, celery carrots and cook for five minutes or until onion is translucent.
  2. Add chicken and garlic and cook for 5 minutes until tender.
  3. To the mixture, add the broth, salt and pepper. Cover and bring to a boil.
  4. Add the cauliflower, and sweet potatoes and reduce the heat to low. Cover and simmer for 10 to 15 minutes, until chicken is cooked through and vegetables are soft.
  5. Add coconut milk, lemon zest and fresh herbs and serve warm.
